Big Batch Sparkling Honey Palomas

Ingredients

Serves about 25 (adjust as needed)

8 cups fresh grapefruit juice
2 cups fresh lime juice
1 cup honey
1 cup warm water
3–4 cups tequila blanco (depending on how strong you like it)
4 cans sparkling water (I love grapefruit LaCroix, but any works)
Ice

For garnish:

sliced oranges, grapefruits, and limes
Himalayan pink salt for the rims of glasses
optional: tajin for the rims of glasses

Instructions

  1. In a heatproof bowl, combine the honey and warm water (not boiling—you want to preserve the honey’s benefits). Stir until the honey fully dissolves into a smooth syrup. Let it cool completely. You can also do this step in a saucepan on the stove.
  2. In a large drink dispenser, add the grapefruit juice, lime juice, tequila (start with 3 cups and adjust to taste), and sparkling water.
  3. Once the honey syrup has cooled, pour it into the mixture and stir everything well to combine.
  4. Place in the fridge to chill. When ready to serve, add ice into the dispenser (pre-chilling helps prevent the ice from melting too quickly and diluting the cocktail).
  5. Add sliced grapefruit, lime, and oranges into the dispenser to make it extra gorgeous!
  6. To serve, run a lime wedge around the rim of each glass and dip it into pink salt or tajin. Fill the glass with ice, pour in the paloma, and garnish with fresh citrus slices. Cheers!
