Itโ€™s one of those recipes that feels impressive without actually requiring much work (my favorite kind). Ingredients

serves 6

For the tomatoes:
12 oz cherry tomatoes (about 2โ€“2ยฝ cups)
2 garlic cloves, minced
1 tbsp avocado oil
Salt and pepper

For the dip:
ยฝ cup plain Greek yogurt
8 oz block feta cheese
1 tbsp lemon juice
1 tsp Italian seasoning

For serving:
balsamic glaze
fresh basil, chopped
toasted baguette slices and/or crackers

Instructions

  1. Preheat your oven to 400ยฐF.
  2. Add the cherry tomatoes and minced garlic to a baking dish or sheet pan. Drizzle with avocado oil, season with salt and pepper, and toss to coat. Roast for 20โ€“25 minutes, until the tomatoes are soft and slightly caramelized.
  3. While the tomatoes are roasting, add the Greek yogurt, feta, lemon juice, and Italian seasoning to a food processor. Blend until smooth and creamy, scraping down the sides as needed.
  4. Spread the whipped feta onto a serving plate or shallow bowl.
  5. Once the tomatoes have cooled slightly, spoon them (and the juices) over the feta dip.
  6. Finish with freshly chopped or torn basil, a drizzle of balsamic, and some cracked pepper.
  7. Serve with toasted baguette slices, crackers, or veggies and enjoy.
