I took a shortcut here using Sweet Lorenโs break and bake cookie dough, which keeps this super quick, stress-free, and gluten-free. You can absolutely use your favorite homemade cookie dough if you prefer, but this version is such a win when you want something fast that still feels homemade. I made two versions: a classic chipwich-style with chocolate chip cookies and mini chocolate chips pressed around the edges, and a sugar cookie version with rainbow sprinkles that feels extra fun and festive. You can easily make these dairy-free if you prefer, depending on the ice cream you use.
The key trick here is slightly underbaking the cookies so they stay soft, and freezing them before assembling so they donโt crumble when you press the ice cream in. Once you get that part down, the rest is easy peasy!
Ingredients
each package of cookies makes 12 sandwiches
1 package Sweet Lorenโs chocolate chip cookie dough
1 package Sweet Lorenโs sugar cookie dough
Vanilla ice cream of choice (for dairy I like Ice Cream for Bears or Tillamook; for dairy-free I like Cosmic Bliss)
Mini chocolate chips (I use Enjoy Life)
Dye-free rainbow sprinkles
Instructions
- Preheat oven to 350ยฐF. Line a baking sheet with parchment paper.
- Remove cookie dough from the fridge. Cut each cookie dough square in half and roll each half into a ball.
- Place on prepared baking sheet and press down slightly. Bake about 7โ9 minutes, so they are slightly underbaked and still soft in the center.
- Remove from the oven and allow the cookies to cool completely.
- Transfer to the cooled cookies to the freezer and freeze for at least 1 hour. This step is key so the cookies donโt crumble when assembling.
- Once cookies are firm, scoop vanilla ice cream onto one cookie using a small cookie scoop. Gently press a second cookie on top to form a sandwich.
- For the sugar cookie version, sprinkle rainbow sprinkles over the exposed ice cream edges.
- For the chocolate chip version, roll the edges in mini chocolate chips, then gently press the chips into the ice cream so they stick.
- Work in batches, assembling a few sandwiches at a time and placing them back in the freezer before continuing, so the ice cream doesnโt melt.
- Freeze assembled sandwiches until fully set. Remove from the freezer just before serving and enjoy!
