Everything you love about a classic s’more, baked into a soft, chewy (grain-free) blondie. With melty chocolate, gooey marshmallows, and crunchy Honey Cinnamon Simple Mills Sweet Thins for that graham cracker flavor, they’re the ultimate nostalgic gluten-free summer dessert. Ideal for serving at summer parties (especially for next week’s 4th of July celebrations) or anytime you’re craving something a decadent treat.
Ingredients
½ cup unsalted butter, softened
â…” cup coconut sugar
1 egg
1 tsp vanilla extract
2½ cups finely blanched almond flour
½ cup finely crushed Simple Mills Honey Cinnamon Sweet Thins ½ teaspoon baking soda
¼ teaspoon kosher salt
Filling / Toppings
½ cup + ¼ cup chocolate chips
â…“ cup mini marshmallows (I used 3 of these, chopped up)
Handful of Simple Mills Honey Cinnamon Sweet Thins, broken into pieces
Instructions
- Preheat the oven to 350°F. Line a 9×5-inch loaf pan or an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal. Spray with avocado oil spray.
- In a food processor, process the Simple Mills Sweet Thins into a crumb consistency. Set aside.
- In a large bowl, cream together the softened butter and coconut sugar until light and fluffy, about 2–3 minutes.
- Beat in the egg and vanilla.
- In a separate bowl, whisk together the almond flour, finely crushed Honey Cinnamon Sweet Thins, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until a thick cookie dough forms.
- Fold in 1/2 cup chocolate chips and half of the chopped or mini marshallows.
- Press and spread about 3/4 of the batter evenly into the prepared pan, leaving some to dollop on top.
- Sprinkle the remaining chocolate chips and marshmallows on top of the batter, then press it slightly into the batter.
- Dollop the remaining batter over the top. It shouldn’t completely cover the filling.
- Bake for 20 minutes, then add the crumbled Sweet Thins over the top, and put back into the oven for another 10-20 minutes (will depend on your pan size). It’s done when the edges are golden and the center is just set.
- Allow to cool before removing the blondies by pulling up on both sides of the parchment paper. Once cool, slice nto 12 blondies. Enjoy!
