Instructions

  1. Preheat the oven to 350°F. Line a 9×5-inch loaf pan or an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal. Spray with avocado oil spray.
  2. In a food processor, process the Simple Mills Sweet Thins into a crumb consistency. Set aside.
  3. In a large bowl, cream together the softened butter and coconut sugar until light and fluffy, about 2–3 minutes.
  4. Beat in the egg and vanilla.
  5. In a separate bowl, whisk together the almond flour, finely crushed Honey Cinnamon Sweet Thins, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until a thick cookie dough forms.
  6. Fold in 1/2 cup chocolate chips and half of the chopped or mini marshallows.
  7. Press and spread about 3/4 of the batter evenly into the prepared pan, leaving some to dollop on top.
  8. Sprinkle the remaining chocolate chips and marshmallows on top of the batter, then press it slightly into the batter.
  9. Dollop the remaining batter over the top. It shouldn’t completely cover the filling.
  10. Bake for 20 minutes, then add the crumbled Sweet Thins over the top, and put back into the oven for another 10-20 minutes (will depend on your pan size). It’s done when the edges are golden and the center is just set.
  11. Allow to cool before removing the blondies by pulling up on both sides of the parchment paper. Once cool, slice nto 12 blondies. Enjoy!
