Lemon Poppy Seed Protein Bites

Our lemon tree has been out of control lately so Iโ€™ve been coming up with all sorts of fun ways to use all our fresh citrus! Enter these Lemon Poppy Seed Protein Bites! Theyโ€™re packed with lemony flavor and loaded with healthy fats and protein to satisfy your afternoon snack attack. They’re the perfect thing to keep on hand in your fridge or freezer when you just need a little something to get you through to your next meal. The combination of protein and fat will fill you up and keep you satisfied during your busy day, and obviously aside from being super healthy, they’re SO delicious! They didn’t last more than 24 hours in our house so I think I’ll have to make a double batch next time! 

Ingredients

Makes 12-15 balls.

1 ยฝ cups blanched almond flour
ยผ cup vanilla protein powder or collagen (I like this one)
ยผ tsp salt
2 tbsp unsweetened shredded coconut
Zest of one lemon
1 tbsp fresh lemon juice
2 tbsp pure maple syrup
2 tbsp melted coconut oil
2 tbsp poppy seeds

Garnish:
shredded unsweetened coconut and/or
coconut glaze: 2 tbsp coconut butter + 1 tsp coconut oil (see instructions)
extra lemon zest

Instructions

  1. Combine all ingredients (except garnish) in a food processor and blend until smooth and incorporated.
  2. Place the mixture in the freezer for 10 minutes to allow it to firm up slightly.
  3. Using a small cookie scoop, scoop the dough and roll it into balls. You may need to put some coconut oil on your hands if they get sticky while rolling. Place on a parchment-lined plate.
  4. For garnish, either roll balls in shredded coconut, or drizzle with the glaze (see below).
  5. Refrigerate until set. Store in an airtight container in the refrigerator for up to 5 days, or freeze for longer storage.

For the glaze

  1. To make glaze, melt coconut butter and coconut oil in a small heat-proof bowl in the microwave, 30 seconds at a time until smooth.
  2. Use a spoon to drizzle glaze over the balls, then add extra lemon zest and poppy seeds on top. Refrigerate until set.
