Sweetheart French Toast for your Valentine

I know there’s a lot of Valentine’s haters out there. I know, I know, it’s corny, the flowers are quadruple the normal price, pre-set restaurant menus are lame and expensive, and it’s really just a ridiculous holiday created by Hallmark. BUT… I still love it! Can’t help it. While I refuse to go out to any stuffy restaurants and I’d  much rather receive no-reason-flowers than Valentines flowers, I’m definitely not going to miss out on an excuse to make homemade Valentines with doilies, glitter, and stickers (in fact, my girlfriends are coming over tonight to do just that!) or to turn all my food into heart-shapes all day, starting with this Sweetheart French Toast!

Doesn’t French Toast just put you in a good mood?  It just feels like a special occasion brunch item, even if you are just eating it on a Wednesday morning before Pilates (not the best idea, speaking from experience!).  To make this delicious brunch happen, all you need is your bread of choice (I went with Ezekiel’s cinnamon raisin bread as well as a more decadent and traditional choice of French Brioche), a few simple ingredients, and your favorite toppings. But if you want to Valentines-ify it a bit, you’ll also need a heart-shaped cookie cutter (or a knife to cut your bread into hearts) and some festive plates to serve your brekkie to your sweetie. Simple and easy!

Ingredients
4-6 slices of bread (depending on size of bread and size of cookie cutter)
3 eggs
1 cup unsweetened vanilla almond milk
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tbsp ground flaxseed
Sprinkle of salt
2 tbsp butter, ghee, or coconut oil for cooking

Topping:
Berries
Drizzle of honey or 100% maple syrup
Sprinkle of powdered sugar

Serves 2.

  1. Whisk together eggs and almond milk in a bowl. Add cinnamon, nutmeg, salt,  ground flaxseeds, and vanilla extract and mix well. Set aside.
  2. Using a heart-shaped cookie cutter or a knife, cut your bread into hearts.
  3. Soak hearts in batter. Meanwhile, heat butter, coconut oil, or ghee in a medium pan on the stove.
  4. Carefully transfer the hearts from the batter to the skillet.
  5. Cook hearts on each side until golden brown. Just a couple minutes each!
  6. Serve with berries and any other toppings you love! Drizzle honey or maple syrup over the top and finish with a sprinkle of powdered sugar. YUM!
  7. Transfer french toast to a plate. If hearts have become somewhat blob-like during the cooking process, feel free to use a knife to reshape it into a heart.
