Hi Friends! I was sad to miss Tuesday’s video post, but I was hard at work finishing the last tweaks to the site revamp! As you can see, it still has the same vibe, but just a cleaner and fresher look! You’ll notice the new slideshow on the home page, more concise formatting, a common theme throughout the site, and – very exciting – my videos are now in higher definition, yay! It’s been a labor of love, and I hope you like the new look!

I love a good marinara sauce because it is so versatile. It’s certainly not just for pasta! Tomato sauce is a great way to add a kick of flavor to your veggies, fish, or chicken, without adding a ton of calories or fat. I picked up this easy recipe idea at Los Tamarindos cooking class, where I learned about the best cooking trick ever, Magic Oil. With this oil (or just some garlic, Italian herbs, and olive oil) and fresh tomatoes, you have everything you need to make an amazing sauce! Top it with a little salt and pepper and use it to wake up your dinner creations . . . So simple and incredibly healthy!

Ingredients
4 ripe tomatoes
2 tbsp Magic Oil – or 2 tbsp extra virgin olive oil with chopped
garlic and your favorite Italian herbs… I used tons of basil!
Salt & Pepper to taste
Serves 3.
Cook with lid off to thicken the sauce. If it’s still too juicy, pour some of the watery juice out. It should thicken within about 15 minutes on the stove!
