Ingredients

For the chicken:
1.5 lbs organic chicken breast, cut into bite-sized pieces
Salt & pepper
2 tbsp arrowroot flour
3 tbsp avocado oil
1 bag broccoli florets
2 tbsp water

For the sauce:
½ cup fresh orange juice
2 tbsp coconut aminos
1 tsp sesame oil
2 cloves garlic, minced
1 1-inch knob fresh ginger, minced
2 tbsp rice vinegar
½ tsp arrowroot flour
1 tbsp orange zest

Garnish: orange zest, chopped green onion, toasted sesame seeds, & (optional) red pepper flakes

Serves 3.

Instructions

  1. Cut chicken breasts into bite-sized pieces, place in a bowl & season w/ salt & pepper. Add 2 tbsp arrowroot & toss the chicken to coat it evenly.
  2. Heat avocado oil in a large skillet over medium-high heat. Add chicken & sear for about 2-3 minutes on each side until starting to brown but not fully cooked through. Transfer to a plate & set aside.
  3. In the same skillet used for the chicken, combine orange juice, coconut aminos, sesame oil, garlic, ginger, & rice vinegar. Stir, bring to a boil, then reduce to a simmer. Once simmering, add ½ tsp arrowroot flour & continue to stir until thickened.
  4. Add the chicken back into the skillet, toss in the sauce & stir in orange zest.
  5. Push chicken to one side of the skillet, making room for the broccoli. Add broccoli florets plus 2 tbsp water, cover with a lid until the broccoli steams and the chicken is cooked through, about 5 min.
  6. Once the broccoli is tender, season it with salt & pepper, then transfer your chicken & broccoli to a bowl. Garnish with a little more orange zest, green onions, & sprinkle with toasted sesames seeds (and some red pepper flakes if desired). DIG IN!
