You guys… I made these no-bake cookie dough balls the other day, and every time I opened the fridge and spotted them, I immediately got excited and grabbed one. This was both a good and bad thing – good because they’re super delicious and they totally satisfy the sweet tooth (in a much healthier way than most other treats), and bad because, well, they’re super delicious, also super addicting… making me run to the fridge way too often to sneak just one more (famous last words). Safe to say they didn’t last too long in our house. Anyway, I know you’ll love this perfect bite-sized treat as much as I do, and hopefully they’ll last a bit longer in your kitchen!


Another reason I love these Paleo No-Bake Cookie Dough Balls – they come together really quickly and are made with just a few simple ingredients. Seriously so easy! And no baking means you get to devour them after just a couple minutes. Yay for that!
Ingredients
1/2 cup almond butter (I used Trader Joe’s mixed nut butter – so good!)
2 tbsp pure maple syrup
1 tbsp melted coconut oil
1 tsp vanilla extract
Sprinkle of ground cinnamon
Pinch of sea salt
1/2 cup almond flour
1/4 cup chocolate chips (or mini chocolate chips!)
Makes 16 cookie dough balls.
Instructions
- Combine all ingredients except almond flour and chocolate chips in your food processor. Process until smooth and combined. You can also mix it by hand in a medium bowl.
- Add the almond flour and process again until well combined.
- Add the chocolate chips process once more for a few seconds – you still want the chips to have some texture.
- Use a spoon or a small cookie scoop to scoop out the dough and roll it into balls about the size of a tablespoon. You can add a few extra chocolate chips on the outside once they’re rolled to make them extra cute.
- Place the cookie dough balls on a plate and freeze for 10 minutes. Then move into the fridge and store there for a quick grab-and-go to satisfy that sweet tooth.
