Have you noticed that kale is showing up on menus all over the place? This superfood is full of nutrients and vitamins including iron, Vitamin A, Vitamin C, calcium, Vitamin K . . . the list goes on and on. OK great, so it’s healthy, but does it actually taste good?
Well, when I first started making kale salads, they were always coarse and bitter. I couldn’t figure out why mine never turned out like the salads I ordered at restaurants. THEN, I learned a little trick – if you cut the kale into small pieces and let it sit in the dressing for at least an hour (or better yet, overnight), it is so much tastier!
The last kale salad I created had these ingredients:
Chopped kale
Pine nuts – toasted quickly on the stovetop
Sliced TJ’s black mission figs (you can substitute with
dates, currants, or golden raisins)
Chicken breast
Avocado
Freshly shaved Parmesan cheese
Dressing: equal parts olive oil and lemon juice, plus a little salt to taste
I threw all the ingredients into a big tupperware, shook it up, put it in the fridge overnight, and brought it to work for lunch the next day. It was delish! Try it out and let me know what you think!
