Instructions

  1. Roast the potatoes: Toss or spray the potatoes with avocado oil, salt, and pepper. Roast at 425ยฐF for 20โ€“25 minutes or air fry at 400ยฐF for about 16 minutes, tossing halfway through, until golden and crispy.
  2. Make the cheeseburgers:
Form the ground beef into 4 patties and season both sides with salt and pepper. Heat oil in a skillet over medium heat. Once hot, add the patties and cook for about 4โ€“5 minutes per side, or until cooked to your preference. Add cheese during the last 1โ€“2 minutes and cover to melt. Remove from pan and let rest.
  3. Sautรฉ the onions:
In the same pan, add a little more oil if needed, then add sliced onions. Cook over medium heat until soft and lightly caramelized, about 5โ€“7 minutes.
  4. Assemble the salad:
Add chopped romaine to a large bowl. Top with tomatoes, cucumbers or pickles, roasted potatoes, avocado, and sautรฉed onions.
  5. Finish and serve:
Slice the cheeseburgers into bite-sized pieces and add to the salad. Drizzle with dressing, toss everything together, and season with extra salt and pepper as needed.

Tips & Easy Swaps

  • Make it a turkey burger: Swap the ground beef for ground turkey and add a little garlic powder + onion powder for extra flavor
  • Dairy-free option: Skip the cheese or use your favorite dairy-free alternative
  • Add more crunch: Pickled onions or shredded cabbage are great here
  • Dressing ideas: Ranch, chipotle ranch, or a simple โ€œspecial sauceโ€ style dressing all work

This is one of those meals that feels a little indulgent but still totally balanced โ€” fresh, hearty, and packed with flavor in every bite. Itโ€™s everything you love about a cheeseburger, just in a lighter, more weeknight-friendly way. Enjoy!
