Who’s excited for the three day weekend? I know I am! That extra day always makes SUCH a huge difference. One of my absolute favorite ways to celebrate the long weekend is with homemade Belgian waffles. It feels so indulgent to roll out of bed late on a Monday when we’re all supposed to be at work, throw on my fluffy robe, and heat up the waffle maker. It’s pure bliss! Cooking up homemade waffles always makes the house smell amazing and it just starts the day off right. Am I right? While it may feel indulgent to scarf down Belgian waffles on your Monday morning, this recipe is totally guilt-free, so go ahead and dig in and don’t even give it a second thought. And feel free to add a little extra powdered sugar and maple syrup on top, because obviously that’s the only way to eat a waffle!

Ingredients
1 cup oat flour
3/4 cup coconut flour
2 eggs, beaten
1 1/2 cup unsweetened almond milk
1/4 cup coconut oil
2 tsp baking powder
1 tsp baking soda
1 tbsp honey
1 tbsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp salt
1 tbsp brown sugar
1 1/2 packets Stevia or Truvia
Toppings: powdered sugar, sliced fruit, and pure maple syrup
Yields approx. 6 servings
1. Preheat your waffle maker. Spray with non-stick spray.
2. Whisk together the eggs, coconut oil, almond milk, honey, and vanilla.
3. Next mix in all of the dry ingredients with your egg/milk mixture. Use an electric mixer (or
your strong arms) to mix well and make sure the batter is evenly combined.
4. Carefully pour your batter onto the preheated waffle iron and cook until golden
brown. Serve with fruit, powdered sugar, and maple syrup on top!
