Garlic Roasted Rainbow Carrots

This little side dish makes me so happy. First of all, how pretty is it!? Secondly, it’s just as easy as it is beautiful. And most importantly, it’s delicious. Obviously you know I also have to fill you in about the health benefits. Carrots are high in antioxidants, specifically beta-carotene, which improves our skin and eye health, fights against oxidative stress, and defends against inflammation. Plus they’re packed with tons of vitamins, minerals, and a healthy dose of fiber that keeps us satiated and stabilizes our blood sugar. ​

In my opinion, roasting is the absolute BEST way to make carrots. It brings out all of the flavor, and it only requires a couple ingredients and a few minutes of prep. I’d definitely recommend using these multi-colored heirloom carrots because they’re serious showstoppers, right? Side note, I’m thinking I may need to hang this ombre carrot picture in my kitchen to brighten things up in there! It would make me so happy every day. OK let’s get going on the easiest recipe ever… 

Ingredients
2 bunches of rainbow carrots (about 20 carrots), washed and tops trimmed
1 1/2 tbsp avocado oil
2 garlic cloves, minced
1/2 tsp ground cumin
Salt & pepper to taste
2 tbsp parsley, chopped

Serves 3.

1. Preheat oven to 400°. 2. Place washed and trimmed carrots on a baking sheet. Drizzle with avocado oil. Add minced garlic and sprinkle cumin, salt & pepper. Toss well.3. Bake for 30-35 minutes (tossing halfway through) or until carrots are browned and tender.4. Garnish with chopped parsley. Devour!
