Citrus Avocado Salad

It’s that time of year when all the citrus is absolutely bursting at the farmers markets and I’m taking full advantage of this juicy season! You guys know I’m all about a big, colorful salad, and this one couldn’t be easier to throw together. It’s super simple because these fresh ingredients just shine on their own and don’t need much to turn them into a delicious salad. It really doesn’t even require a “recipe” – just throw your favorite citrus over a big bed of lettuce, add some avocado slices, mint, and pistachios, dress it with a good olive oil, and season with salt and pepper, and you’re good to go!

Seriously so fresh and juicy, right!? Want to make your salad look extra pretty with those citrus segments? Here’s how to segment your citrus (also called supremed citrus), it’s really not too hard!

How to segment/supreme your citrus:

  1. Cut off the two ends of the orange or grapefruit and then stand it on one of the flat ends that you just sliced.
  2. Next, take a sharp knife, and working from top to bottom, cut the peel off, following the shape of the fruit as you cut it downwards. You’ll want to remove all of the white peel while keeping as much of the fruit in tact as possible. We don’t want to waste that juicy citrus!
  3. Turn the orange on it’s side on your cutting board. See those white lines going down the sides? Those are called membranes. Slice right inside each membrane towards the center of the fruit, then slice right inside the adjacent membrane, and remove the segment. Repeat with all other segments.

5 big handfuls of your favorite greens – I used red butter lettuce because it’s so colorful and pretty plus some little gems for extra crunch!
1 grapefruit*, sliced or segmented
1 orange (I used blood orange), sliced or segmented
1 avocado, sliced
1/4 cup fresh mint, roughly chopped or torn
1/4 cup pistachios
Drizzle of good-quality extra virgin olive oil
Juice from 1/2 lemon or orange
Good flaky salt & pepper to taste

*if you don’t love grapefruit, just use all oranges!

Instructions

Serves 2-3

  1. Place a bed of lettuce in a large bowl or on a platter. 
  2. Scatter the citrus segments on top and add the avocado slices. Add pistachios and mint. 
  3. Drizzle with olive oil, squeeze 1/2 a lemon, and add any of the juices that accumulated on the cutting board while segmenting your citrus. Sprinkle with salt and pepper.
  4. Toss and serve! So easy!
