Brookie Skillet (Paleo-Friendly)

If you love freshly-baked cookies & brownies (who doesn’t!?), you’re going to flip over this Brookie Skillet, which combines the two into one swirly, melty skillet that is seriously delicious beyond words! It’s literally my ideal dessert and after spending the last hour editing these photos, all I want to do is dive head first right into it, who’s with me!? The best part of this dessert (aside from the taste) is the fact that it’s made from 2 boxed mixes – Simple Mills brownie mix & chocolate chip cookie mix, making it literally the easiest dessert on earth. I’m almost embarrassed to admit how easy the recipe is, but I think we all love a kitchen shortcut, especially when it means using mixes that are grain-free & refined sugar-free & made with such simple, wholesome ingredients! Here’s how to make your new fave dessert!

Ingredients

Makes 1 Brookie skillet

Brownie Layer:
1 box Simple Mills brownie mix
1/2 cup avocado oil or melted butter
3 tbsp water
2 eggs
1 tsp vanilla extract

Cookie layer:
1 box Simple Mills chocolate chip cookie mix
3 tbsp unsweetened almond milk
2 tsp vanilla extract
4 tbsp avocado oil or melted butter
Optional: a sprinkle of sea salt

Instructions

  1. Preheat oven to 300 degrees and line a baking sheet with parchment paper.
  2. Add the walnuts, cashews, and pepitas to a food processor or blender and pulse a few times to roughly
    chop the nuts. (Do not grind them into a fine meal – just a rough chop!)
  3. Follow the instructions on the cookie mix box & whisk together cookie dough.
  4. Transfer spoonfuls of the cookie dough to the brownie batter and lightly pat it into the batter. Scatter the cookie dough throughout the skillet, then use a spoon or spatula to gently marble/swirl the top of the two batters together.
  5. Bake for 20-25 minutes or until cooked to your preference – less time if you like it a little doughy like I do. Remove from the oven and sprinkle with sea salt.
  6. Optional – serve with your favorite refined sugar-free vanilla ice cream or with whipped coconut cream. Enjoy!
