I almost skipped out on posting this recipe on the blog because it felt like it might be too simple, but honestly, those recipes are always the best! Who doesn’t love a meal that comes together in a matter of minutes with just a few ingredients!? I lived on breakfast quesadillas while I was pregnant and they’re still something I crave all the time. You can easily customize them by adding your favorite veggies inside, changing up your tortillas (I always use Siete almond flour tortillas), and using whatever cheese you prefer. However you whip it up, you can’t go wrong!
While there’s no wrong way to make a breakfast quesadilla, I have found a method that makes things come together even more quickly. You can see the step-by-step video here and in the photos below. I used to scramble the eggs and veggies, put them on a separate plate, then add the tortilla and put the eggs back on, but my new and improved method is to just add the tortilla right on top of the eggs, let it set for about 30 seconds or so, then flip. Less dishes and steps!



Sauté your veggies, add eggs, add cheese, and run spatula around the sides so it doesn’t stick.
Place tortilla right on top of the eggs / cheese. Let it sit for 30 seconds or so to set.
Place the spatula under the eggs and hand on top of tortilla and flip!


Add cheese on one half of the eggs.
Fold the other half over. Done!
Ingredients
2 eggs, whisked
2 slices nitrate-free turkey bacon, chopped
1 handful spinach
⅓ cup shredded Mexican cheese
1 tbsp extra virgin olive oil
1 tortilla (I use Siete Foods almond flour tortillas)
Sliced avocado or guacamole
Chives for garnish, chopped
Instructions
- Choose a pan that is roughly the same size as your tortilla. Heat olive oil in the pan over medium heat.
- Add turkey bacon and sauté about 3 minutes until beginning to brown. Add spinach (or any other veggies) and continue to sauté until wilted.
- Pour the eggs in. Cook until the edges are starting to set, then add ½ the cheese.
- Place your tortilla on top and let it sit for about 30 seconds before flipping.
- Flip eggs & tortilla and sprinkle the rest of the cheese over half of the eggs.
- Fold the other half over the cheesy half.
- Transfer to a plate, slice, and serve with guacamole or sliced avocado and chopped chives. Enjoy!!
