Banana Chia Overnight Oats

Say hello to your favorite new healthy breakfast that’s a total breeze to prep ahead – Banana Chia Overnight Oats. I’ve been making this every week and seriously get so excited in the mornings knowing that this is waiting for me in my fridge. Since posting the reel on my instagram a couple months ago, it’s definitely become one of my most popular recipes. It’s packed with protein and fiber and will keep you nice and full through the morning. It’s also made without any added sugar but tastes sweet and almost desserty. You guys will love it!

Ingredients

in each serving (I usually make 3 at  a time):
1/3 banana, mashed
1/2 cup unsweetened nut milk
1/2 cup rolled oats (I use One Degree Organics)
1 tbsp chia seeds
1 scoop vanilla collagen or protein powder
Sprinkle of cinnamon
1 tbsp of your favorite yogurt (I used @cocojune_organic vanilla coconut yogurt)
Toppings: your favorite berries, granola, nuts, and/or nut butter

Instructions

  1. Mix mashed banana and nut milk in a jar or small Tupperware.
  2. Add the remaining ingredients (except the toppings) and stir well.
  3. Top with berries. Cover and refrigerate for at least 2 hours (or overnight).
  4. Remove from fridge and garnish with granola (better right before serving to keep it crunchy), a drizzle of nut butter, a splash of nut milk, or any other desired toppings. Give everything a stir and dig in and enjoy!
