Serving: yields 3 mini ramekins
Ingredients
1 1/2 banana
1/2 medium avocado
1/4 cup cacao powder
2 tbsp maple syrup or honey
1 tsp vanilla extract
1 pinch of sea salt
Optional toppings: coconut whipped cream, 1/2 sliced banana, cacao nibs, sea salt, chocolate chips, fruit, chopped nuts
Instructions
1. Combine banana, avocado, and cocoa powder in a food processor and whirl it up until smooth.
2. Add remaining ingredients. Mix it up once more until perfectly smooth.
3. Divide pudding into ramekins. Refrigerate for 30 minutes to get it nice and cold… or don’t, if you just can’t wait.
4. Adding whipped coconut cream or other toppings, if desired.
