When you just need a “this is delicious, you’re the best, Mom!” type of win from your kids, try these Almond Butter & Banana-Stuffed French Toast Roll-Ups. We had a less-healthy version of this on our vacation and I knew I had to come home and recreate it my way with a little less sugar, and I have to say, it was a hit! You can use any nut butter you’d like, spread it on your bread, roll it up with a banana, and then make it the way you’d typically make french toast. click here. Ingredients
3 eggs
1/3 cup unsweetened nut milk
1 tsp vanilla extract
1/2 tsp cinnamon
5-6 pieces of bread (I used organic sprouted wheat bread, gf bread should work too)
2 bananas
Almond butter
2 tbsp coconut oil
Maple syrup for serving
- Mix together eggs, milk, vanilla, and cinnamon. Set aside.
- Roll each slice of bread with a rolling pin to thin it out. Don’t go too thin or it will break.
- Spread almond butter (or your fave nut butter) on each slice.
- Slice a banana in half lengthwise, then cut each half down the center, and down the center again, into 4 long banana pieces per half.
- Place the slice of banana on one side of the almond-buttered bread, then tightly roll to the other side.
- Melt 1 tbsp coconut oil in a pan over medium heat. Carefully dip each bread/banana roll-up in the egg mixture completely, then let the excess drip off, and place into the pan.
- Turn each roll up to allow to cook until golden on all sides. Remove from pan and set aside on a plate.
- Add 1 more tbsp coconut oil into the pan, plus 1 banana, cut into rounds. Sprinkle with cinnamon.
- Cook the banana slices for a minute or so on each side until starting to caramelize. Once finished, add on top of the french toast roll-ups.
- Drizzle with maple syrup and dig in! Enjoy!!
