Arugula Blackberry Salad

03.26.2013

Spring has officially sprung, so what better time than now for this delightful, refreshing, and fruity salad!? I have always been a fan of salads with berries and nuts, so I wanted to make a quick and simple WNB salad that combines several of my favorite ingredients.

This is a perfect salad for a ladies lunch or would be great as a side salad with a light fish, chicken, or steak main dish. The dressing is super easy, and so darn flavorful, you might as well just make a bunch of the dressing at once and keep it in a bottle in the fridge for later!

Ingredients
2 1/2 cups or 2 large handfuls of arugula
1 cup sliced cherry tomatoes
1 1/4 cup blackberries
1/2 avocado – cubed
1/4 cup freshly shaved parmesan
1/3 cup pecan halves or pieces
Salt & pepper to taste

Dressing:
1 garlic clove – very finely chopped
1/2 tbsp extra virgin olive oil
1/2 tbsp balsamic vinegar

Serves 3. Toss it all together and enjoy!

This salad is really easy to customize… you don’t want blackberries? Try raspberries, strawberries, and/or pomegranate seeds! You love goat or feta cheese? Exchange that for the parm. How about caramelized walnuts  or toasted almonds instead of pecans . . . why not!? Make it your new favorite salad and let me know how you love it! ๐Ÿ™‚ It’s almost bikini season, so spring salads and fresh & healthy WNB meals are our BFFs!

PS – happy Passover and soon to be Easter! This is a perfect recipe to whip up and help you stay away from bread products during Passover or a great addition to your Easter meal!
