Apple Pie Chia Pudding

So I know we’re in the heart of Fall right now, and we should be wearing cute flannels and boots and making hearty soups and baking delicious muffins … BUT it’s over 100 degrees in San Diego right now (seriously, is that a record??), and that means I’m definitely not turning on the oven. So what’s a girl to do to get that fix of cozy Fall flavors? Not to worry … this Apple Pie Chia Pudding is the perfect way to get in the October spirit without breaking a sweat! 

This recipe was inspired by a super fun collaboration with a huge group of talented bloggers. We all got together and decided we’d share our favorite apple recipes on the same day. For the pudding:
1/2 cup chia seeds
1 3/4 cups unsweetened almond milk
1 tbsp vanilla extract
Optional: 3 drops organic liquid stevia for extra sweetness

For the apples:
1 apple, diced (I used honeycrisp) 
1 tbsp coconut oil
1 tsp ground cinnamon
1 tbsp 100% maple syrup

Serves 4.

Instructions

  1. Pour almond milk, vanilla, and chia seeds into a tupperware. Add stevia drops if desired. Whisk well, cover with a lid, and place into the fridge for at least 3 hours (whisking once more after an hour). 
  2. Heat coconut oil in a saucepan over medium heat. 
  3. Add diced apples and cinnamon, and stir until evenly coated. Sauté until the apples are tender, about 6-8 minutes.
  4. Turn off heat and stir in maple syrup.
  5. Place a serving of chia pudding in a bowl and top with a scoop of sautéed apples. Or feel free to pour all of the apple mixture into the chia pudding tupperware and mix in with the chia pudding.
  6. Enjoy!
