Apple Cinnamon Galette

It’s WeekNight Bite – Holiday Edition today, and you’re going to love this delicious, warm, and cozy Apple Cinnamon Galette. A galette is a rustic french tart . . . keyword “rustic”. I love finding recipes that are supposed to have a rustic look, which basically means to me that it’s totally freeform and hard to mess up! You can make it look any way you want, and it will never be questioned because it’s homemade and “rustic”! Anyway, this tart is beyond yummy. I learned how to make a galette at The New School of Cooking and just fell in love with the whole process. We made galettes with all different fruits – peach, strawberry, and apple – and they were all amazing, but the apple one just screamed HOLIDAYS to me. I’m envisioning making this in a snowy cabin somewhere, sitting by a fireplace, and diving into my apple galette with fresh whipped cream, while listening to Mariah Carey holiday music. Doesn’t that sound SO lovely? Wellll, it’s about 80° in LA today, no snow, and I have a fake fireplace, but I do have Mariah ready to go, and I do have my apple galette, so that’s good enough for me!  

Making the homemade crust was very exciting for me because 1, you only need 4 ingredients, 2, it’s super easy and I’m no longer intimidated by it, and 3, this crust recipe can be used for pies, galettes, and quiches! You’re learning some serious life skills today on WeekNight Bite! I admit we’re working with some serious butter here, but everyone out there should know how to make a homemade crust, and when it’s done, you can split the galette with 5 friends and not even worry about it! So here we go . . . this is how you’re going to make your new favorite holiday dessert:

Ingredients
Crust:
1 1/4 cup all purpose flour
1/2 tsp salt
Pinch of sugar
1 stick (4 oz) butter – cold, and cut in 1 inch cubes
1/4 cup ice water

Filling:
1 1/2 green apples – peeled and thinly sliced
1 tsp ground cinnamon
Pinch ground nutmeg
1 tsp vanilla extract
1/2 tbsp sugar
2 tbsp lemon juice
1/2 tbsp butter

Serving: 5 slices

  • For crust, combine dry ingredients. Then add cubes of cold butter, a few at a time. Using your hands, mix it together until everything crumbles together and there are no large chunks of butter. By the time the entire stick has been added and you’ve crumbled it all nicely, it should look sand-like and smooth.
  • Now start adding ice water until dough just holds together. Add only a little at a time, you most likely will only need about 1/8 cup. Once the dough is sticky enough to hold together, knead it into a disk-shaped ball, cover in saran wrap, and refrigerate for 1 hour.
  • For the filling, add all ingredients except butter into a bowl and mix to coat the apples evenly.
  • After refrigerating dough for an hour, roll it out (between sheets of parchment paper) with a rolling pin (or a wine bottle!). Roll it into a circular shape (doesn’t need to be perfect) until it is about 1/4 inch throughout.
  • Add apples in the center of the dough, with about 1 tbsp of the juices from the bowl.
  • Fold edges in and create your galette, pressing the edges together so no juice seeps out as it cooks.
  • Using a pastry brush, brush the remaining juices from the bowl of apples on the edges of the galette, then sprinkle with sugar.
  • Cut a few small pieces of cold butter, and add it on top of the apples in the galette.
  • Bake at 375° for 30-35 minutes or until edges are golden.
  • Serve right away!
