Hanukkah starts on Sunday, and if you’re looking for a fun, easy, and delicious way to get into the spirit, these Hanukkah Gelt Cookies are it. They come together with just a handful of simple ingredients, minimal prep time, bake up soft and chewy, and feel instantly festive when you add that chocolate gelt coin on top. They’re made with simple ingredients, flourless so they’re naturally gluten-free, and truly couldn’t be easier to make — the perfect treat to kick off the holiday. Make them with peanut butter or almond butter, you really can’t go wrong – I used almond butter since we have a peanut allergy in the house, and they turned out just as delicious. Ingredients

makes 12 cookies

1 cup natural almond butter
2/3 cup coconut sugar
1 egg
1/2 tsp baking soda
12 chocolate gelt coins, unwrapped

Optional: organic cane sugar, for rolling

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper and lightly spray it with avocado oil.
  2. In a mixing bowl, stir together the almond butter, coconut sugar, egg, and baking soda until the dough is smooth and fully combined. It will be thick at first — just keep mixing and it will come together.
  3. Use a cookie scoop to scoop out the dough. Roll each scoop between your hands to form a smooth ball.
  4. For an extra-festive sparkle, spread some cane sugar onto a plate, then roll each ball in the sugar.
  5. Place the dough balls on the prepared baking sheet, leaving about 2 inches between each cookie — they will spread as they bake.
  6. Bake for 12–15 minutes. Note: the cookies may look soft and not fully set when you take them out of the oven, but let them rest on the baking sheet for a few minutes and they’ll firm up as they cool.
  7. While the cookies are still warm, gently press a chocolate gelt coin into the center of each cookie. Allow them to cool slightly and set, then enjoy!
